Abstract

While studies on food consumption in the field of tourism have increased, the scarcity of studies
on local food consumption draws attention. In this research, a scale development study was
conducted that was expected to explain local food consumption intention with expected utility and
expectation theory. Quantitative research was used as a method in the research. A questionnaire
was used to collect data. It was held in July 2023 with the participation of 136 people. The main
mass of the study consists of local people living in Kahramanmaraş city center. In the analysis of
the pilot study, partial least squares structural equation analysis was performed using the Smart
PLS 4 program. In the research carried out to develop the scale, 14 variables with meaningless t
values were excluded from the scale. In the analysis performed again, factor loads were calculated,
and accordingly, the final version of the scale consisting of 41 variables was determined. As a
result of the research, it has been seen that the local food consumption intentions of individuals
change according to their expectations and expectations, apart from their perceptions of risk
avoidance behaviors. This situation stands out as an important information for local food
producers and sellers.
